The art of improvisation was common in Baroque music...and was rarely written down. There are documents from the era that thoroughly explain the art of improvising continuo parts, but still little on solos.
Many organists did write down their own improvisations as teaching pieces for their students and many of them also wrote for strings.
We've included the original chorales...a quick web search will give you the texts if you want them sung when you pay the preludes. It is very common to play the chorale simply, and then play the Chorale Prelude.
The best thing about all of these is that they are also beautiful music.
